Blue Soft Cheese
Blue cheeses have bluish veins throughout the interior of the cheese. Made like a soft or non-cooked semi soft cheese, however, a culture is introduced to the curdled milk to encourage mould to develop. Maturation takes place in a humid environment and the cheese is pierced with needles for air to envelop it, thus further developing the veining.
